My weight loss journey starts TODAY!

Today is the day where I vow to start taking better care of myself. I have a six month goal in mind. In the next 6 months I will be documenting my weight loss journey online. I’ll be doing a plant based diet inspired by High Carb Hannah to start off with. Over the last year and a half I’ve gained over 25kgs due too a mental breakdown, medication, depression, bad eating habits and hermit inactive lifestyle. At the end of my 6 month journey I will be going snowboarding! This year, I was unable to fit into the snowboarding stores XL sizes! I was devastated and embraced.

Incubus is my favourite band

stellar2Growing up I think that every 90’s kid has hear of this band Incubus. their song “Drive” is one of there most popular songs. Above is a quote poster I created in photoshop. I’m pretty happy with how it turned out. I’ve been loving trying out new photoshop tutorials.

vegan pineapple mini cupcakes

pine1Today I decided to bake. Since my blogs called craving pineapple, I thought making mini pineapple upside down cupcakes was totally in order. These are super rich and they are VEGAN. Personally I have been Vegan for nearly a year and a half, well its sometimes not easy it fun testing out new recipes. It still blows my mind that its totally possible and delicious baking without eggs and milk.  I look forward to bringing you more vegan related posts in the future.

Ingredients:

6tbsp Vegan Butter or Margarine

1/2cup Soy Milk

1cup Plain Flour

1 ½tsp Baking Powder

1/4tsp Salt

1/3cup Applesauce

3/4cup Sugar

 

For the Topping

6tbsp Vegan Butter or Margarine

¾ brown sugar

1can Pineapple Rings

Directions:

  1. Heat oven to 180degrees. Spray oil evenly throughout a 12-cup muffin pan.
  2. Microwave butter and milk for 2mins or until melted, then set aside
  3. Prepare the pineapple topping, by placing ½tbsp butter and 1tbsp of brown sugar into each muffin cup. Place pan in oven to melt for 3min.
  4. Cut pineapple rings into quarters and then place 2 pieces of the pineapple into the bottom of each cup.
  5. In a large bowl mix applesauce and sugar together. Then add flour, salt and baking powder to same bowl mixing well until combine.
  6. Add milk/butter mix to the large bowl mixture and mix together.
  7. Pour batter into muffin pan. Cook for 20-25 minutes until golden brown.
  8. Once cooked place pan onto a rack and allow to cool for 5 mins. Loosen each muffin by running a knife around the edges. Then flip the tray over some backing paper and allow to cool down completely.
  9. Serve and enjoy yummm…

Dear Diary, Today is day one of Alex Beadon’s blogging challenge and although, I don’t know my readers yet, today’s challenge is to describe them. So, here are a few little guesses of what they (you) may be like. First of all my future blog readers are beautiful young woman in their 20’s. They are sweet; they love braids, tea, self help books and cuddling beneath the covers, especially on stormy nights (or is that just me). They are woman who are open to alternative lifestyle choices. But most of all they are curious about all that I love, all the lessons I have learned and all the people whom inspire me, to lead a creative vegan lifestyle.
